Gaggia Classic Evo Pro–85th Anniversary Edition Overview
The Gaggia Classic Evo Pro is a 100% Italian single-boiler dual use espresso machine and the definitive choice for new home baristas. In 2023 Gaggia introduced a new OPV for 9 bar extractions, updated steel components and a protective coating to prevent corrosion and scale formation in the boiler. Similar to prosumer machines, the Classic Evo Pro is equipped with a 3-way solenoid valve, a 58mm commercial portafilter, and a commercial-style steam wand.
The 85th Anniversary Edition offers the same great machine in a commemorative matte-gold color with gold accents.
Features and Benefits

To improve longevity without sacrificing quality, Gaggia left the Classic’s brass brew group alone but updated the group cover with a new polished steel surround that won’t peel or flake over time.
Gaggia also updated the 58mm commercial portafilter, exchanging chrome-plated brass for stainless steel to better match the group and eliminate visual imperfections that could occur with the previous design.
Externally, little has changed apart from the more lustrous group cover. The Classic Evo Pro is still housed in a one-piece steel frame and features a suite of high quality rocker switches and corresponding LEDs to operate the machine. After brewing, a dry and easy to knock out puck is possible thanks to the 3-Way Solenoid valve which discharges wastewater directly into the drip tray. The commercial 58mm stainless steel portafilter retains heat for temperature stability and is compatible with a wide range of premium portafilter baskets, tampers, and other preparation accessories. For frothing milk the Classic Evo Pro uses a commercial style stainless steel steam wand.
Internally the Classic Evo Pro rests on a more solid foundation with an updated mounting plate to secure the pump and boiler and reduce noise generated by vibration. Additionally, the boiler itself was given special attention and is now protected by a food safe inert anti-scale coating to help prevent the formation of limescale and extend the life of the machine.
