Gaggia Classic Evo Pro Overview

The Gaggia Classic Evo Pro is a 100% Italian single-boiler dual use espresso machine and the definitive choice for new home baristas. In 2023 Gaggia introduced the Classic Evo Pro which built upon that foundation with a new OPV for 9 bar extractions, updated steel components and a protective coating to prevent corrosion and scale formation in the boiler. Similar to prosumer machines the Classic Evo Pro is equipped with a 3-way solenoid valve, a 58mm commercial portafilter and a commercial style steam wand.

Features and Benefits

The appeal of the Gaggia Classic has always been its adherence to specialty coffee standards. Espresso is now brewed at 9 Bar thanks to an update to the OPV spring. To improve longevity without sacrificing quality, Gaggia left the Classic’s brass brew group alone but updated the group cover with a new polished steel surround that won’t peel or flake over time. Gaggia also updated the 58mm commercial portafilter, exchanging chrome-plated brass for stainless steel to better match the group and eliminate visual imperfections that could occur with the previous design.

Externally, little has changed apart from the more lustrous group cover. The Classic Evo Pro is still housed in a one-piece steel frame and features a suite of high quality rocker switches and corresponding LEDs to operate the machine. After brewing, a dry and easy to knock out puck is possible thanks to the 3-Way Solenoid valve which discharges wastewater directly into the drip tray. The commercial 58mm stainless steel portafilter retains heat for temperature stability and is compatible with a wide range of premium portafilter baskets, tampers, and other preparation accessories. For frothing milk the Classic Evo Pro uses a commercial style stainless steel steam wand.

Internally the Classic Evo Pro rests on a more solid foundation with an updated mounting plate to secure the pump and boiler and reduce noise generated by vibration. Additionally, the boiler itself was given special attention and is now protected by a food safe inert anti-scale coating to help prevent the formation of limescale and extend the life of the machine.

In the box, the Gaggia Evo Classic Pro includes the following accessories:

Double Spout Stainless Steel Commercial Portafilter, 7g Single Shot Basket, 14g Double Shot Basket, 14g Pressurized Double Shot Basket, Two Way Diffuser Pin, Coffee Scoop, Plastic Tamper

Why You Should Get It

The Gaggia Classic has been the go-to for home espresso for decades and the Classic Evo Pro offers a modern interpretation of an enduring design, optimized for specialty coffee brewing. Gaggia has delivered meaningful improvements with more durable stainless steel components and a new boiler treatment while also addressing the needs of specialty coffee drinkers with the inclusion of a 9 Bar OPV. If you’re considering getting into home espresso as a hobby or simply looking for a reliable machine that’s built to last, the Classic Pro delivers.

  • 9 Bar Extractions

A highly requested update among specialty coffee enthusiasts, the North American version of the Classic Evo Pro extracts coffee at 9 bar of pressure thanks to an update to the OPV. As a result the brew profiles on the Classic Evo Pro are in line with those found on prosumer home espresso machines.

  • Inert Anti-Scale Boiler Coating

To protect against scale buildup the boiler in the Classic Evo Pro now features a food safe, inert nonstick coating. The coating serves to protect the boiler and increase the longevity of the machine by preventing the formation of limestone.

  • One-Piece Steel Frame

The Classic Evo Pro is housed in a single stainless frame made of solid metal with no plastic or veneer to be found. With a sleek contour that matches the curve of the drip tray and recessed sides for easy access to the water reservoir the housing perfectly blends form and function.

  • Improved Internal Design

For improved serviceability and stability, the new group cover assembly also features an updated mounting plate to better support the pump and boiler.

  • Commercial Steam Wand

A long awaited update, the commercial steam wand gives you full control over milk frothing. The Classic Evo Pro's impressive steam power allows you to produce perfectly textured milk for latte art.

  • Stainless Steel Components

To improve the luster and durability of the brew group without sacrificing quality, Gaggia designed a polished stainless steel group cover that now surrounds the brass brew group. The portafilters have also been updated to stainless steel with better polishing and no visible mill marks.
