Features and Performance

The Varia EVO Hybrid grinder allows you to choose between grinding by hand or using the 80 RPM motor head. Either way, the EVO is designed with precision in mind—it uses a 38mm stainless steel Supernova Burr set (the same technology and burr geometry as is found in Varia’s award-winning VS3 grinder) with 140 steps of grind adjustments at just 10 microns per step. That makes it capable of grinding for a wide variety of coffee preparations, from espresso to cold brew and everything in between. 
The magnetically-attaching grounds chamber fits well into a standard 58mm portafilter basket for easy transfer when grinding for espresso, making the EVO one of the cleaner grinders we’ve seen. The grounds chamber fits up to 35 grams of whole beans at a time, so you can grind enough at once to prepare up to two cups of coffee. 

The EVO is also built to last, made entirely from space-grade aluminum alloys and stainless steel and machined to a 0.02mm tolerance. The built-in auto-stop function prevents motor burn-out by stopping grinding when the chamber is empty or if the motor is being over-taxed.
